Ingredients
  

Marinade
  • 1 cup orange juice freshly squeezed
  • 1/2 cup lime juice freshly squeezed
  • 1/4 cup olive oil
  • 6 cloves garlic minced
  • 1 tablespoon oregano dried
  • 1 tablespoon cumin ground
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly ground
  • 1/2 teaspoon red pepper flakes optional for heat
Chicken
  • 4 pieces chicken thighs bone-in, skin-on

Method
 

Prepare the Marinade
  1. In a mixing bowl, whisk together the orange juice, lime juice, olive oil, minced garlic, oregano, cumin, salt, black pepper, and red pepper flakes until well combined.
  2. Reserve 1/4 cup of the marinade for basting later.
Marinate the Chicken
  1. Place the chicken thighs in a large resealable plastic bag or a shallow dish.
  2. Pour the marinade over the chicken, ensuring all pieces are well coated.
  3. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
Grill the Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and discard the marinade.
  3. Place the chicken thighs on the grill, skin side down, and cook for about 6-7 minutes.
  4. Flip the chicken and grill for another 6-7 minutes, basting with the reserved marinade.
  5. Cook until the internal temperature reaches 165°F (75°C).
Serve
  1. Remove the chicken from the grill and let it rest for 5 minutes before serving.
  2. Serve with your choice of sides and enjoy!
