  • 1 large yellow onion sliced
  • 5 cloves garlic crushed
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 2 tsp smoked paprika
  • Juice of 2 limes
  • 1 cup low-sodium chicken broth
  • 1 tbsp brown sugar
  • Salt to taste
  • Pepper to taste

Cooking Steps
  1. In a bowl, mix cumin, oregano, smoked paprika, brown sugar, salt, and pepper.
  2. Rub the marinade over the pork shoulder; let it sit overnight for best flavor.
  3. Select 'sauté' on your Instant Pot and cook sliced onions until translucent; add crushed garlic until fragrant.
  4. Place the marinated pork in the pot, pour chicken broth over it, and squeeze lime juice on top.
  5. Secure the lid and set to 'manual' high pressure for 60 minutes; allow natural release for 15 minutes.
  6. Shred the pork with two forks and mix with some cooking liquid to retain moisture.
