Chicken
  • 2 cups cooked chicken shredded or diced
Vegetables
  • 2 cups romaine lettuce chopped
Dressing
  • 1/2 cup Caesar dressing store-bought or homemade
Bread
  • 8 slices ciabatta bread or your choice of sandwich bread
Cheese
  • 1 cup Parmesan cheese grated
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
Oil
  • 2 tablespoons olive oil

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine the cooked chicken, Caesar dressing, garlic powder, and black pepper. Mix well.
  2. Let the mixture sit for about 5 minutes to allow the flavors to meld.
Toast the Bread
  1. While the chicken mixture is resting, toast the ciabatta bread slices until golden brown.
Assemble the Sandwich
  1. On four slices of toasted bread, layer the romaine lettuce, followed by the chicken mixture, and sprinkle with grated Parmesan cheese.
  2. Top with the remaining slices of toasted bread to complete the sandwiches.
Serve
  1. Cut the sandwiches in half and serve immediately with extra Caesar dressing on the side if desired.
