Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts (3-4 breasts)
  • 4 cloves fresh garlic minced
  • 1 inch fresh ginger minced
  • 0.5 cup low-sodium soy sauce
  • 0.25 cup honey (or agave)
  • 0.25 cup freshly squeezed lemon juice
  • 1 cup low-sodium chicken broth
  • 2 pieces green onions chopped (for garnish)
  • 2 tbsp toasted sesame seeds (optional)

Method
 

  1. Dice the chicken into bite-sized pieces and mince garlic and ginger finely.
  2. In a bowl, whisk together soy sauce, honey, lemon juice, and chicken broth.
  3. Place diced chicken in the crockpot and pour the sauce over it. Stir gently to coat.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until tender.
  5. Stir in chopped green onions and sesame seeds before serving.
  6. Serve over steamed rice or noodles.
