Ingredients
  

Chicken
  • 2 pieces chicken breasts boneless, skinless
  • 1 cup buttermilk for marinating
  • 1 cup all-purpose flour for coating
  • 1 cup panko breadcrumbs for extra crunch
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
Sandwich Assembly
  • 4 slices ciabatta bread or your choice of bread
  • 2 cups romaine lettuce chopped
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1/2 cup Parmesan cheese shredded
  • 2 tablespoons olive oil for toasting bread

Method
 

Prepare the Chicken
  1. Marinate the chicken breasts in buttermilk for at least 30 minutes.
  2. In a bowl, mix flour, salt, pepper, and garlic powder.
  3. Dredge the marinated chicken in the flour mixture, then coat with panko breadcrumbs.
  4. Heat oil in a frying pan over medium heat and cook the chicken for 6-7 minutes on each side until golden brown and cooked through.
Assemble the Sandwich
  1. Toast the ciabatta bread slices in a toaster or on a baking sheet in the oven.
  2. Spread Caesar dressing on the bottom slice of each toasted bread.
  3. Layer with chopped romaine lettuce, crispy chicken, and sprinkle with Parmesan cheese.
  4. Top with the other slice of bread and serve immediately.
