  • 2 cans butter beans drained and rinsed
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
Dairy
  • 1 cup heavy cream or coconut cream for a vegan option
  • 1/2 cup parmesan cheese grated
Herbs and Spices
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes optional for heat
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Oil
  • 2 tablespoons olive oil

Method
 

Prepare the Ingredients
  1. Drain and rinse the butter beans. Halve the cherry tomatoes and mince the garlic.
  2. Grate the parmesan cheese and set aside.
Cook the Vegetables
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  2. Add the cherry tomatoes and cook for another 3-4 minutes until they start to soften.
Combine Ingredients
  1. Stir in the butter beans, spinach, oregano, red pepper flakes, salt, and black pepper. Cook for 5 minutes until the spinach wilts.
  2. Pour in the heavy cream and bring to a simmer. Cook for an additional 5-7 minutes until the sauce thickens.
Finish the Dish
  1. Remove from heat and stir in the grated parmesan cheese until melted and combined.
  2. Serve warm, garnished with additional parmesan if desired.
