  • 8 oz pasta
  • 3 cups fresh spinach roughly chopped
  • 4 oz high-quality smoked salmon sliced
  • 1 cup heavy cream
  • 3 cloves garlic minced
  • 2 tbsp lemon juice
  • ½ cup grated Parmesan cheese
  • Salt to taste
  • Pepper to taste
  • 1 tbsp olive oil

Method
 

  1. Cook pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Add fresh spinach to the skillet and sauté until wilted, about 2 minutes.
  4. Pour in heavy cream and lemon juice; stir gently until combined.
  5. Add cooked pasta and smoked salmon to the skillet, tossing gently to coat with sauce.
  6. Stir in grated Parmesan cheese until melted; season with salt and pepper to taste.
  7. Serve hot, garnished with additional Parmesan if desired.
