Ingredients
  

  • 8 oz penne pasta
  • 2 cups fresh spinach, chopped
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 8 oz cream cheese
  • 2 cups shredded mozzarella cheese divided
  • ¼ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare a baking dish with nonstick spray.
  2. In a skillet over medium heat, add olive oil, onions, and garlic. Sauté until onions are translucent (3-5 minutes).
  3. Add spinach and artichokes; cook until spinach wilts (2-3 minutes).
  4. Lower heat and mix in cream cheese until melted; stir in reserved pasta water to achieve desired creaminess.
  5. Combine cooked pasta with the creamy mixture, adding 1½ cups mozzarella and seasonings.
  6. Transfer to the baking dish; top with remaining mozzarella and Parmesan. Bake for 25-30 minutes or until golden brown.
