Salad Base
  • 2 medium beets peeled and diced
  • 1 large sweet potato peeled and diced
  • 4 cups mixed greens such as arugula and spinach
  • 1 cup feta cheese crumbled
Dressing
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Roast Beets and Sweet Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. Place diced beets and sweet potatoes on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Roast in the oven for 25-30 minutes, or until tender, stirring halfway through.
Prepare Dressing
  1. In a mixing bowl, whisk together olive oil, balsamic vinegar, honey, minced garlic, salt, and pepper until well combined.
Assemble Salad
  1. In a large bowl, combine mixed greens, roasted beets, and sweet potatoes.
  2. Drizzle with dressing and toss gently to combine.
  3. Top with crumbled feta cheese before serving.
