Method
Cook the Vegetables
- In a large pot, heat a splash of oil over medium heat. Add the diced onion and carrots, and sauté for about 5 minutes until softened.
- Add the broccoli florets and cook for another 2-3 minutes.
Add Orzo and Broth
- Stir in the orzo, vegetable broth, garlic powder, salt, and pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the orzo is tender.
Finish with Cheese and Cream
- Remove the pot from heat and stir in the heavy cream and shredded cheddar cheese until melted and creamy.
- Serve warm, garnished with additional cheese if desired.
