Ingredients
  

Pork Tenderloin
  • 1 lb pork tenderloin trimmed of excess fat
Mushroom Sauce
  • 8 oz cremini mushrooms sliced
  • 1 cup heavy cream
  • 1 cup chicken broth low sodium
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp thyme dried
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Garnish
  • 2 tbsp fresh parsley chopped

Method
 

Prepare the Pork
  1. Preheat the skillet over medium-high heat. Season the pork tenderloin with salt and pepper.
  2. Add olive oil to the skillet and sear the pork on all sides until golden brown, about 5-7 minutes.
  3. Use a meat thermometer to check for an internal temperature of 145°F. Remove from skillet and let rest.
Make the Mushroom Sauce
  1. In the same skillet, add the minced garlic and sliced mushrooms. Sauté until mushrooms are browned, about 5 minutes.
  2. Pour in the chicken broth and bring to a simmer. Let it reduce for about 5 minutes.
  3. Stir in the heavy cream and thyme, and let it simmer until thickened, about 5-7 minutes. Season with salt and pepper to taste.
Combine and Serve
  1. Slice the rested pork tenderloin and return it to the skillet with the mushroom sauce. Coat the pork with the sauce.
  2. Garnish with chopped parsley and serve hot.
