Method
Cook the Pasta
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente.
- Reserve 1 cup of pasta water, then drain the pasta in a colander.
Prepare the Creamy Sauce
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth.
- Season with salt and black pepper to taste. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Combine and Serve
- Add the drained pasta to the skillet with the creamy sauce. Toss to coat the pasta evenly.
- Garnish with chopped parsley and additional Parmesan cheese if desired. Serve immediately.
