Potatoes
  • 2 pounds Russet potatoes
Dressing
  • 1 cup full-fat mayonnaise
  • 2 tablespoons yellow or Dijon mustard
  • pickle juice (optional)
  • Salt to taste
  • Pepper to taste

  • 1 cup chopped celery
  • 1/2 cup finely diced red onion
  • 4 hard-boiled eggs, chopped
  • 1/2 cup diced dill pickles or relish
  • Fresh dill optional

Method
 

Preparation
  1. Wash and cut potatoes into even chunks. Boil in salted water for 15-20 minutes until fork-tender.
  2. In a large bowl, mix mayonnaise, mustard, salt, and pepper. Optionally add pickle juice.
  3. Once potatoes cool slightly, fold in celery and onion.
  4. Gently mix in chopped eggs and pickles.
  5. Toss everything together until coated with dressing. Chill for at least an hour before serving.
