Ingredients
  

Pasta and Chicken
  • 12 oz Fettuccine pasta
  • 1 lb Boneless chicken breasts cut into bite-sized pieces
  • 1 tbsp Olive oil for cooking chicken
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
Cowboy Butter Sauce
  • 1/2 cup Unsalted butter melted
  • 2 tbsp Garlic minced
  • 1 tbsp Fresh parsley chopped
  • 1 tbsp Fresh chives chopped
  • 1 tbsp Lemon juice freshly squeezed
  • 1 tsp Paprika
  • 1 tsp Cayenne pepper optional for heat
  • 1/2 cup Heavy cream

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside.
Cook the Chicken
  1. In a skillet, heat olive oil over medium heat. Season the chicken pieces with salt and pepper. Add to the skillet and cook until golden brown and cooked through, about 7-10 minutes. Remove from heat.
Prepare the Cowboy Butter Sauce
  1. In a bowl, combine melted butter, minced garlic, parsley, chives, lemon juice, paprika, and cayenne pepper. Mix well.
Combine and Serve
  1. In the skillet with the chicken, add the cooked pasta and pour the cowboy butter sauce over. Stir to combine and add heavy cream. Cook for an additional 2-3 minutes until heated through. Serve immediately.
