Method
Prepare the Pastry
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface and cut it into 2-inch squares.
Assemble the Bites
- Place a piece of brie cheese in the center of each pastry square.
- Top the brie with a spoonful of cranberry sauce and a sprinkle of rosemary, if using.
- Fold the corners of the pastry over the filling and pinch to seal.
Bake
- Brush the tops of the pastry bites with the beaten egg.
- Bake in the preheated oven for 15-20 minutes, or until golden brown.
- Remove from the oven and drizzle with honey if desired.
