Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Rice
  • 1 cup jasmine rice rinsed
  • 2 cups water
Coconut Lime Sauce
  • 1 can coconut milk full-fat for creaminess
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon lime zest for extra flavor
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 tablespoon soy sauce or tamari for gluten-free
  • 1 teaspoon sugar optional, to balance flavors
Garnish
  • 2 tablespoons fresh cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Cook the Rice
  1. In a pot, combine the rinsed jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and water is absorbed.
  2. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
Prepare the Chicken
  1. In a large skillet, heat a tablespoon of oil over medium heat. Season the chicken pieces with salt and pepper.
  2. Add the chicken to the skillet and cook for about 5-7 minutes, stirring occasionally, until browned and cooked through.
Make the Coconut Lime Sauce
  1. In the same skillet, add garlic and ginger, sauté for 1 minute until fragrant.
  2. Pour in the coconut milk, lime juice, lime zest, soy sauce, and sugar. Stir to combine and bring to a simmer.
  3. Let the sauce simmer for about 5 minutes until slightly thickened.
Combine and Serve
  1. Add the cooked chicken back to the skillet and stir to coat in the sauce.
  2. Serve the coconut lime chicken over the fluffy rice, garnished with fresh cilantro and lime wedges.

Notes
