Ingredients
  

Pasta and Vegetables
  • 8 ounces rotini pasta or any pasta of choice
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1 cup shredded lettuce
Protein and Cheese
  • 1 cup cooked chicken diced
  • 1 cup bacon cooked and crumbled
  • 1 cup cheddar cheese shredded
Dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente.
  2. Drain the pasta in a colander and rinse under cold water to cool.
Prepare the Dressing
  1. In a mixing bowl, whisk together mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and black pepper until smooth.
Combine Ingredients
  1. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, shredded lettuce, diced chicken, crumbled bacon, and shredded cheddar cheese.
  2. Pour the dressing over the pasta mixture and toss until everything is well coated.
Serve
  1. Chill in the refrigerator for at least 30 minutes before serving for the best flavor.
