Classic Christmas Toffee

Ingredients
  

Toffee Base
  • 1 cup unsalted butter cut into pieces
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
Topping
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped nuts such as almonds or pecans

Method
 

Prepare the Baking Sheet
  1. Line a baking sheet with parchment paper and set aside.
Cook the Toffee
  1. In a heavy-bottomed saucepan, combine the butter, sugar, water, and salt. Cook over medium heat, stirring constantly until the mixture reaches a boil.
  2. Continue to cook without stirring until the mixture reaches 300°F (hard crack stage) on a candy thermometer.
  3. Remove from heat and stir in the vanilla extract.
  4. Quickly pour the toffee onto the prepared baking sheet and spread it evenly.
Add Toppings
  1. Sprinkle the chocolate chips over the hot toffee. Allow them to sit for a few minutes until melted, then spread the chocolate evenly over the toffee.
  2. Sprinkle the chopped nuts over the melted chocolate and gently press them in.
Cool and Break
  1. Let the toffee cool completely at room temperature until hardened, about 1 hour.
  2. Once cooled, break the toffee into pieces and store in an airtight container.

Notes
