Crust
  • 200 g Chocolate Digestive Biscuits
  • 75 g Unsalted Butter melted
Filling
  • 500 g Full-Fat Cream Cheese
  • 100 g Icing Sugar
  • 2 whole Fresh Oranges zest and juice
  • 150 g Dark Chocolate melted
  • 10 g Gelatin Powder
  • 250 ml Heavy Cream whipped until stiff peaks

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Crush the chocolate biscuits into fine crumbs and mix with melted butter. Press into a springform pan and bake for 10 minutes. Let cool.
  2. Beat cream cheese until smooth, then add icing sugar, orange zest, and juice. Mix well.
  3. Dissolve gelatin in warm water and stir into the cream cheese mixture until well combined.
  4. Whip heavy cream until stiff peaks form, then gently fold into the cream cheese mixture.
  5. Pour filling over the cooled crust and refrigerate for at least four hours or overnight.
  6. Top with melted dark chocolate ganache before serving.
