Ingredients
  

Chicken Marinade
  • 1 lb boneless, skinless chicken thighs cut into strips
  • 2 tbsp chipotle in adobo sauce minced
  • 2 tbsp olive oil
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp cumin
  • 1 tsp salt
Taco Filling
  • 1 cup fresh pineapple diced
  • 1 cup red onion finely chopped
  • 1 cup cilantro chopped
  • 8 small corn tortillas warmed
  • 1 cup sour cream for serving

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine the chicken, chipotle in adobo, olive oil, lime juice, cumin, and salt. Mix well to coat the chicken.
  2. Cover and let marinate in the refrigerator for at least 15 minutes.
Cook the Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F.
Prepare the Tacos
  1. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing it into bite-sized pieces.
  2. In a skillet, combine the grilled chicken, pineapple, and red onion. Cook for an additional 2-3 minutes until heated through.
  3. Assemble the tacos by placing the chicken mixture on warmed tortillas and topping with cilantro, avocado slices, and a dollop of sour cream.
