Ingredients
  

Chicken and Marinade
  • 2 cups grilled chicken sliced
  • 2 tablespoons chipotle sauce or to taste
  • 1 teaspoon olive oil
Panini Assembly
  • 8 slices ciabatta bread or any preferred bread
  • 1 cup pepper jack cheese shredded
  • 1 cup fresh spinach
  • 1 medium tomato sliced
  • 2 tablespoons mayonnaise optional

Method
 

Prepare the Chicken
  1. In a bowl, mix the grilled chicken with chipotle sauce and olive oil until well coated.
  2. Let the chicken marinate for at least 10 minutes.
Assemble the Panini
  1. Preheat the grill pan over medium heat.
  2. Spread mayonnaise on one side of each slice of ciabatta bread.
  3. Layer the marinated chicken, pepper jack cheese, spinach, and tomato on the unbuttered side of four slices of bread.
  4. Top with the remaining slices of bread, mayonnaise side up.
Grill the Panini
  1. Place the assembled paninis on the grill pan and press down with a spatula.
  2. Grill for about 5 minutes on each side, or until the bread is golden brown and the cheese is melted.
  3. Remove from the grill and let cool for a minute before slicing in half.
