Ingredients
  

Chicken and Marinade
  • 1 lb boneless, skinless chicken breasts cut into strips
  • 2 tbsp chipotle chili powder
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp black pepper
Bowl Ingredients
  • 1 cup cooked brown rice
  • 1 can black beans drained and rinsed
  • 1 cup corn fresh or frozen
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1 cup shredded lettuce
Creamy Sauce
  • 1/2 cup Greek yogurt
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp chipotle sauce or to taste
  • 1 pinch salt

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine chipotle chili powder, olive oil, garlic powder, cumin, salt, and black pepper. Add chicken strips and coat well. Let marinate for at least 15 minutes.
Cook the Chicken
  1. Preheat the grill over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F.
Prepare the Creamy Sauce
  1. In a small bowl, mix Greek yogurt, lime juice, honey, chipotle sauce, and a pinch of salt until smooth. Adjust seasoning to taste.
Assemble the Bowls
  1. In each bowl, layer cooked brown rice, black beans, corn, grilled chicken, cherry tomatoes, avocado, and shredded lettuce. Drizzle with creamy sauce before serving.
