Ingredients
  

Chickpea Salad
  • 1 can chickpeas drained and rinsed
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/4 cup parsley chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Wraps
  • 4 pieces whole wheat wraps

Method
 

Prepare the Chickpea Salad
  1. In a mixing bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  3. Pour the dressing over the chickpea mixture and toss to combine.
Assemble the Wraps
  1. Lay a whole wheat wrap on a flat surface.
  2. Spoon a portion of the chickpea salad onto the center of the wrap.
  3. Fold in the sides of the wrap and roll it up tightly from the bottom.
  4. Repeat with the remaining wraps and filling.
