Prepare the Ingredients
- Slice the chicken breast into thin strips and set aside.
- Chop the mixed vegetables into bite-sized pieces.
Cook the Chicken
- Heat 1 tablespoon of vegetable oil in a wok over medium-high heat.
- Add the sliced chicken and stir-fry for about 5-7 minutes until cooked through.
Add Vegetables and Noodles
- Add the mixed vegetables to the wok and stir-fry for another 3-4 minutes.
- Meanwhile, cook the udon noodles according to package instructions and drain.
- Add the cooked udon noodles to the wok.
Make the Sauce
- In a small bowl, mix together soy sauce, mirin, sesame oil, and sugar.
- Pour the sauce over the chicken and noodles, tossing to combine well.
Serve
- Garnish with sliced green onions and toasted sesame seeds before serving.
- Serve hot and enjoy your Chicken Yaki Udon!
