Ingredients
  

Chicken Marinade
  • 1 lb boneless, skinless chicken thighs cut into strips
  • 2 tbsp olive oil
  • 2 tbsp plain yogurt
  • 2 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tbsp ground cumin
  • 1 tbsp ground paprika
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1/2 tsp black pepper
Bowl Components
  • 2 cups cooked quinoa
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1 cup red onion thinly sliced
  • 1 cup fresh parsley chopped
  • 1/2 cup hummus for serving
  • 1/4 cup tahini sauce for drizzling

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, yogurt, lemon juice, garlic, cumin, paprika, turmeric, coriander, salt, and pepper. Add chicken strips and coat well. Cover and refrigerate for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
Cook the Chicken
  1. Grill the marinated chicken for about 5-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C).
  2. Remove from grill and let rest for a few minutes before slicing.
Assemble the Bowls
  1. In each bowl, add a base of cooked quinoa.
  2. Top with grilled chicken, diced cucumber, cherry tomatoes, red onion, and parsley.
  3. Add a dollop of hummus and drizzle with tahini sauce before serving.
