Ingredients
  

Chicken Scampi
  • 1 pound chicken breast sliced into strips
  • 4 cloves garlic minced
  • 1/2 cup butter unsalted
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon red pepper flakes optional
  • 1 teaspoon lemon juice freshly squeezed
  • 1/4 cup parsley chopped for garnish
Garlic Parmesan Rice
  • 1 cup long-grain rice
  • 2 cups water
  • 2 cloves garlic minced
  • 1/4 cup parmesan cheese grated
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare Garlic Parmesan Rice
  1. In a pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Add rice and stir for 1-2 minutes until lightly toasted.
  3. Pour in water, add salt, and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked.
  4. Remove from heat, stir in parmesan cheese, and let sit covered for 5 minutes.
Cook Chicken Scampi
  1. In a large skillet, melt butter over medium heat. Add sliced chicken and cook until browned, about 5-7 minutes.
  2. Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Pour in chicken broth and heavy cream, and bring to a simmer. Add red pepper flakes and lemon juice.
  4. Cook for another 5-7 minutes until sauce thickens slightly. Adjust seasoning with salt and pepper if needed.
  5. Serve chicken scampi over garlic parmesan rice and garnish with chopped parsley.

Notes

For a lighter version, you can substitute the heavy cream with half-and-half.
