  • 3-4 pieces boneless, skinless chicken breasts about 1.5 lbs
  • 8 oz penne or rotini pasta cooked
  • 1 can black beans rinsed (15 oz)
  • 1 cup chopped bell peppers mix of colors
  • 2 cups shredded sharp cheddar cheese
  • 1 cup salsa
  • 2 tsp olive oil
Spices
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
Garnish
  • Fresh cilantro optional

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil and diced chicken. Cook until browned and no longer pink.
  3. Stir in chopped bell peppers and black beans. Season with cumin, paprika, garlic powder, and onion powder; cook until peppers soften.
  4. In a large bowl, combine cooked pasta with the chicken and vegetable mixture. Mix in salsa until well-coated.
  5. Transfer to a baking dish and top with shredded cheddar cheese.
  6. Bake for 20–25 minutes until the cheese is bubbly and golden brown.
