Ingredients
  

Chicken
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
Avocado
  • 1 large ripe avocado Mashed or sliced.
Bread
  • 8 slices whole grain bread Or your preferred type of bread.
Cheese
  • 1 cup shredded cheddar cheese Or any cheese of your choice.
Condiments
  • 4 tablespoons mayonnaise Optional, for spreading.
  • 1 teaspoon lime juice To mix with avocado.
Seasoning
  • 1 teaspoon salt To taste.
  • 1/2 teaspoon black pepper To taste.

Method
 

Prepare the Avocado Spread
  1. In a bowl, mash the avocado with lime juice, salt, and pepper until smooth.
Assemble the Sandwich
  1. Spread mayonnaise on one side of each slice of bread.
  2. On the unspread side, layer shredded chicken, avocado spread, and cheese.
  3. Top with another slice of bread, spread side up.
Cook the Sandwich
  1. Heat a grill or skillet over medium heat.
  2. Place the sandwiches on the grill and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Serve
  1. Remove from heat, slice in half, and serve warm.
