Ingredients
  

  • 3 breasts boneless, skinless chicken
  • 1 cup pepperoni slices
  • 2 cups shredded mozzarella cheese
  • ½ cup pizza sauce
  • 1 tsp Italian seasoning
  • 4 rolls sub or English muffins
  • 2 tbsp olive oil
  • ¼ cup grated Parmesan cheese optional

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and season chicken breasts with salt and Italian seasoning. Cook until golden brown and fully cooked, about 6-7 minutes per side.
  3. Shred the chicken while warm and mix it with pizza sauce until well-coated.
  4. Arrange sub rolls on a baking sheet and top each with shredded chicken, pepperoni slices, and mozzarella cheese.
  5. Bake for 10-12 minutes until cheese is melted and bubbly.
  6. Allow to cool slightly before serving.
