Prepare the Potatoes
- Preheat the oven to 425°F (220°C).
- In a mixing bowl, combine the halved baby potatoes with olive oil, ranch dressing mix, garlic powder, and onion powder. Toss until the potatoes are well coated.
Roast the Potatoes
- Spread the coated potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25 minutes, or until golden brown and tender.
Add Cheese
- Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese over the potatoes.
- Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve
- Remove from the oven, garnish with chopped parsley, and serve warm.
