Ingredients
  

Potatoes
  • 2 pounds baby potatoes halved or quartered
Seasoning
  • 1 packet ranch dressing mix dry mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Cheese
  • 1 cup shredded cheddar cheese or cheese of choice
Oil
  • 3 tablespoons olive oil
Garnish
  • 2 tablespoons chopped fresh parsley for garnish

Method
 

Prepare the Potatoes
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine the halved baby potatoes with olive oil, ranch dressing mix, garlic powder, and onion powder. Toss until the potatoes are well coated.
Roast the Potatoes
  1. Spread the coated potatoes in a single layer on a baking sheet.
  2. Roast in the preheated oven for 25 minutes, or until golden brown and tender.
Add Cheese
  1. Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese over the potatoes.
  2. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven, garnish with chopped parsley, and serve warm.
