Ingredients
  

  • 4 large flour tortillas
  • 2 cups diced Russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt to taste
  • 1/4 cup chopped green onions
  • 1/2 cup fresh salsa

Method
 

  1. Peel and dice the potatoes into small cubes. Boil in salted water for about 15 minutes until fork-tender.
  2. Drain the potatoes and return them to the pot. Mash while adding cheese, sour cream, spices, and salt until well combined.
  3. Lay a tortilla flat, spoon filling onto one half, fold over sides, and roll tightly.
  4. Heat a skillet over medium heat with a bit of oil or butter. Cook each burrito seam-side down for about 3-4 minutes per side until golden brown.
  5. Let cool slightly before slicing in half. Top with green onions and salsa before serving.
