Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
Filling
  • 1/2 cup brown sugar packed
  • 1 tablespoon cinnamon
  • 2 tablespoons unsalted butter melted
Icing
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Method
 

Prepare the Cookie Dough
  1. In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together the flour, salt, and baking powder.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Make the Filling
  1. In a small bowl, combine brown sugar, cinnamon, and melted butter, mixing until well combined.
Assemble the Cookies
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Roll out the cookie dough on a floured surface to about 1/4 inch thick.
  3. Use a cookie cutter to cut out shapes and place half on the prepared baking sheet.
  4. Spoon a small amount of filling onto each cookie shape, then top with another cookie shape, sealing the edges.
Bake the Cookies
  1. Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  2. Remove from the oven and let cool on a wire rack.
Prepare the Icing
  1. In a bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle the icing over the cooled cookies.
