Ingredients
  

Salad Base
  • 4 cups broccoli florets fresh, chopped
  • 1 cup carrots shredded
  • 1 cup red bell pepper diced
  • 1/2 cup red onion finely chopped
Crunchy Toppings
  • 1/2 cup sunflower seeds unsalted
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup feta cheese crumbled
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the broccoli florets, shredded carrots, diced red bell pepper, and chopped red onion.
  2. Add the sunflower seeds, dried cranberries, and crumbled feta cheese on top.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
  2. Serve immediately or refrigerate for up to 30 minutes before serving for flavors to meld.
