Method
Cook Pasta
- In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Make Cheese Sauce
- In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until golden.
- Gradually whisk in milk, stirring constantly until the mixture thickens, about 5 minutes.
- Reduce heat to low and add brie, cheddar, and gruyere cheeses. Stir until melted and smooth. Season with salt, pepper, and nutmeg.
Combine and Bake
- Preheat the oven to 350°F (175°C). In a large bowl, combine cooked pasta and cheese sauce. Mix well.
- In a separate bowl, mix panko breadcrumbs with olive oil and parmesan cheese. Sprinkle over the mac and cheese.
- Transfer to a baking dish and bake for 20 minutes until golden and bubbly.
