Ingredients
  

Pasta
  • 8 oz elbow macaroni or any pasta of choice
Cheese Sauce
  • 4 tbsp unsalted butter for roux
  • 4 tbsp all-purpose flour for roux
  • 2 cups milk whole or 2%
  • 8 oz brie cheese rind removed and chopped
  • 1 cup sharp cheddar cheese shredded
  • 1 cup gruyere cheese shredded
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1/4 tsp nutmeg optional
Topping
  • 1 cup panko breadcrumbs for crunch
  • 2 tbsp olive oil for mixing with breadcrumbs
  • 1/4 cup parmesan cheese grated

Method
 

Cook Pasta
  1. In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Make Cheese Sauce
  1. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until golden.
  2. Gradually whisk in milk, stirring constantly until the mixture thickens, about 5 minutes.
  3. Reduce heat to low and add brie, cheddar, and gruyere cheeses. Stir until melted and smooth. Season with salt, pepper, and nutmeg.
Combine and Bake
  1. Preheat the oven to 350°F (175°C). In a large bowl, combine cooked pasta and cheese sauce. Mix well.
  2. In a separate bowl, mix panko breadcrumbs with olive oil and parmesan cheese. Sprinkle over the mac and cheese.
  3. Transfer to a baking dish and bake for 20 minutes until golden and bubbly.
