Ingredients
  

Spaghetti Squash
  • 1 medium spaghetti squash halved lengthwise
Boursin Cheese
  • 8 oz Boursin cheese any flavor
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
Seasoning
  • 2 tbsp olive oil for drizzling
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Method
 

Prepare Spaghetti Squash
  1. Preheat the oven to 400°F (200°C).
  2. Place the halved spaghetti squash cut-side down on a baking sheet.
  3. Roast in the oven for 40-45 minutes, or until the flesh is tender.
Mix Ingredients
  1. In a mixing bowl, combine the Boursin cheese, cherry tomatoes, spinach, olive oil, salt, and pepper.
  2. Mix until well combined.
Combine and Serve
  1. Once the spaghetti squash is cooked, use a fork to scrape the flesh into strands.
  2. Add the Boursin mixture to the spaghetti squash and toss until well coated.
  3. Serve warm and enjoy!
