Ingredients
  

Marinade
  • 1 cup fresh blueberries plus extra for garnish
  • 1/4 cup honey
  • 2 tablespoons fresh thyme leaves chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Chicken
  • 4 pieces boneless chicken breasts about 6 ounces each

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine the fresh blueberries, honey, thyme, olive oil, balsamic vinegar, salt, and black pepper. Use a whisk to blend until smooth.
  2. Reserve a few tablespoons of the marinade for basting later.
Marinate the Chicken
  1. Place the chicken breasts in a large resealable plastic bag or a shallow dish.
  2. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Grill the Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and discard the marinade used for marinating.
  3. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  4. Baste the chicken with the reserved marinade during the last few minutes of cooking.
Serve
  1. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  2. Serve garnished with additional fresh blueberries and thyme, if desired.
