  • 0.5 cups unsalted butter melted

  • 16 oz cream cheese softened
  • 1 cups sour cream
  • 0.75 cups granulated sugar
  • 1 tsp vanilla extract
  • 2 cups blackberries fresh or thawed
  • 3 large eggs

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs and melted butter in a bowl; press firmly into the bottom of a springform pan.
  3. In another bowl, whip softened cream cheese until smooth. Gradually mix in sugar until creamy.
  4. Add sour cream and vanilla; blend until fluffy.
  5. Incorporate eggs one at a time, mixing gently after each addition.
  6. Fold in blackberries carefully to maintain their shape.
  7. Pour filling over crust and bake for 55-60 minutes until slightly jiggly in the center.
  8. Cool on a wire rack for an hour, then refrigerate for at least four hours before serving.
