Ingredients
  

Chicken Salad Filling
  • 2 cups cooked chicken shredded or diced
  • 1/2 cup mayonnaise or Greek yogurt for a lighter option
  • 1/4 cup celery finely chopped
  • 1/4 cup red grapes halved
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
  • 1 tablespoon fresh dill chopped, optional
Cucumber Wraps
  • 2 large cucumbers sliced into long strips

Method
 

Prepare Chicken Salad
  1. In a mixing bowl, combine the cooked chicken, mayonnaise, celery, grapes, Dijon mustard, salt, pepper, and dill. Mix until well combined.
  2. Taste and adjust seasoning if necessary.
Assemble Cucumber Roll Ups
  1. Lay a cucumber strip flat on a cutting board.
  2. Spoon a small amount of the chicken salad mixture onto one end of the cucumber strip.
  3. Roll the cucumber strip tightly around the chicken salad and secure with a toothpick if necessary.
  4. Repeat with remaining cucumber strips and chicken salad.
Serve
  1. Arrange the cucumber roll ups on a platter and serve immediately.
