Ingredients
  

Chicken and Broth
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 6 cups chicken broth low sodium recommended
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Noodles
  • 2 cups egg noodles uncooked

Method
 

Prepare the Soup
  1. In a large pot, heat a little oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and bring to a boil. Add the chicken pieces, thyme, parsley, salt, and pepper. Reduce heat and let simmer for 20 minutes, or until the chicken is cooked through.
Cook the Noodles
  1. Add the egg noodles to the pot and cook according to package instructions, usually about 8-10 minutes, until al dente.
  2. Once the noodles are cooked, taste and adjust seasoning if necessary.
Serve
