Ingredients
  

Dry Ingredients
  • 2 cups rolled oats old-fashioned
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon optional
Wet Ingredients
  • 2 large ripe bananas mashed
  • 1/4 cup honey or maple syrup
  • 1/4 cup milk dairy or non-dairy
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 1/2 cup chocolate chips or nuts
  • 1/4 cup dried fruit like raisins or cranberries

Method
 

Prepare the Oven and Baking Dish
  1. Preheat the oven to 350°F (175°C). Grease or line an 8x8 inch baking dish with parchment paper.
Mix Dry Ingredients
  1. In a mixing bowl, combine rolled oats, baking powder, salt, and cinnamon. Stir until well mixed.
Mix Wet Ingredients
  1. In another bowl, mash the ripe bananas. Add honey, milk, and vanilla extract. Mix until smooth.
Combine Mixtures
  1. Pour the wet mixture into the dry ingredients. Stir until just combined. Fold in any optional add-ins if using.
Bake the Bars
  1. Spread the mixture evenly in the prepared baking dish. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
Cool and Serve
  1. Allow the bars to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.
