Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 large egg
  • 1 cup mashed ripe bananas about 2-3 bananas
  • 1 teaspoon vanilla extract
Add-ins
  • 1/2 cup chocolate chips optional
  • 1/2 cup walnuts chopped, optional

Method
 

Prepare the Dough
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Beat in the egg, mashed bananas, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips and walnuts if using.
Bake the Cookies
  1. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  3. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
