  • 8 oz fresh burrata cheese
Fruit
  • 1 cup ripe cherries pitted and halved
Condiments
  • 1/2 cup balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • Salt to taste
  • Pepper to taste

  • 1/4 cup fresh mint leaves chopped

Method
 

Preparation
  1. Wash and pit the cherries.
  2. In a small saucepan over medium heat, combine balsamic vinegar and half the cherries; simmer for 10-15 minutes until thickened.
  3. Once cooled slightly, mix in chopped mint leaves.
  4. Place burrata on a serving plate and gently break it open.
  5. Spoon the balsamic cherry mixture over the burrata.
  6. Drizzle with olive oil and season with salt and pepper to taste.
