Ingredients
  

Fritter Mixture
  • 1 cup canned pumpkin puree or fresh pumpkin
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar packed
  • 1/4 cup milk or non-dairy alternative
Topping
  • 1 tablespoon powdered sugar for dusting

Method
 

Prepare the Oven and Baking Sheet
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Mix the Fritter Ingredients
  1. In a mixing bowl, combine pumpkin puree, flour, egg, baking powder, cinnamon, nutmeg, ginger, salt, brown sugar, and milk. Mix until well combined.
Form the Fritter Bites
  1. Using a spoon, drop small amounts of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
Bake the Fritters
  1. Bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through.
Serve
  1. Remove from the oven, let cool slightly, dust with powdered sugar, and serve warm.
