Prepare the Potatoes
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the cubed potatoes, olive oil, minced garlic, oregano, thyme, salt, and pepper.
Bake the Potatoes
- Transfer the potato mixture to a baking dish and spread it out evenly.
- Bake in the preheated oven for 25 minutes.
Add Feta and Lemon
- Remove the baking dish from the oven and sprinkle the crumbled feta cheese on top of the potatoes.
- Drizzle the lemon juice over the feta and return to the oven.
- Bake for an additional 15-20 minutes, until the potatoes are tender and the feta is golden.
Serve
- Remove from the oven and let cool for a few minutes before serving.
- Enjoy your baked feta potatoes warm as a side dish or main course!
