Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes peeled and cubed
Feta Cheese
  • 8 ounces feta cheese crumbled
Olive Oil
  • 3 tablespoons olive oil extra virgin
Herbs
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
Garlic
  • 4 cloves garlic minced
Salt and Pepper
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Lemon
  • 1 whole lemon juiced

Method
 

Prepare the Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the cubed potatoes, olive oil, minced garlic, oregano, thyme, salt, and pepper.
Bake the Potatoes
  1. Transfer the potato mixture to a baking dish and spread it out evenly.
  2. Bake in the preheated oven for 25 minutes.
Add Feta and Lemon
  1. Remove the baking dish from the oven and sprinkle the crumbled feta cheese on top of the potatoes.
  2. Drizzle the lemon juice over the feta and return to the oven.
  3. Bake for an additional 15-20 minutes, until the potatoes are tender and the feta is golden.
Serve
  1. Remove from the oven and let cool for a few minutes before serving.
  2. Enjoy your baked feta potatoes warm as a side dish or main course!
