  • 4 large bell peppers red, yellow, or green
  • 1 cup elbow macaroni
  • 1 lb ground beef or turkey lean
  • 1 can (15 oz) chili beans mild
  • 1 can (14.5 oz) diced tomatoes
  • 1.5 cups shredded cheddar cheese divided
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tbsp olive oil

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat; sauté onions and garlic until translucent.
  3. Cook macaroni according to package instructions; drain.
  4. In a bowl, mix cooked macaroni, ground meat, chili beans, diced tomatoes, spices, and half the cheese until combined.
  5. Halve the bell peppers lengthwise and remove seeds; fill each pepper with the mixture.
  6. Place stuffed peppers in a baking dish, top with remaining cheese, cover with foil, and bake for 25 minutes.
  7. Remove foil and bake for an additional 10 minutes until bubbly and golden.
