Ingredients
  

Base
  • 2 cups brown rice cooked
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen, cooked
Toppings
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1 cup cabbage shredded
  • 1/4 cup cilantro chopped
  • 1 lime juiced
Protein
  • 1 lb chicken breast diced
  • 1 tbsp olive oil for cooking
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
Sauce
  • 1/2 cup Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1 tsp sriracha optional

Method
 

Cook the Rice
  1. In a large pot, cook the brown rice according to package instructions.
  2. Once cooked, fluff with a fork and set aside.
Prepare the Chicken
  1. In a skillet, heat olive oil over medium heat.
  2. Add diced chicken, cumin, paprika, salt, and pepper.
  3. Cook for about 7-10 minutes until chicken is cooked through and golden brown.
Assemble the Bowls
  1. In mixing bowls, layer cooked rice, black beans, and corn.
  2. Top with cooked chicken, cherry tomatoes, avocado, cabbage, and cilantro.
  3. Drizzle with lime juice and serve with Greek yogurt sauce on the side.
Make the Sauce
  1. In a small bowl, mix Greek yogurt, lime juice, garlic powder, and sriracha.
  2. Stir until well combined and set aside.
