Bacon Jalapeño Eggrolls

Ingredients
  

Filling
  • 8 slices bacon cooked and crumbled
  • 2 medium jalapeños seeded and finely chopped
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 pkg eggroll wrappers
Frying
  • 4 cups vegetable oil for frying

Method
 

Prepare the filling
  1. In a mixing bowl, combine the crumbled bacon, chopped jalapeños, cream cheese, shredded cheddar cheese, garlic powder, and onion powder. Mix until well combined.
  2. Lay an eggroll wrapper on a clean surface with a corner facing you. Place about 2 tablespoons of the filling in the center of the wrapper.
Roll the eggrolls
  1. Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly to seal. Use a little water to seal the top edge.
  2. Repeat with the remaining wrappers and filling.
Fry the eggrolls
  1. Heat the vegetable oil in a deep fryer or large pot over medium heat until hot.
  2. Carefully add the eggrolls in batches, frying until golden brown and crispy, about 3-4 minutes per side.
  3. Remove the eggrolls and drain on paper towels.
Serve
  1. Serve the bacon jalapeño eggrolls warm with your favorite dipping sauce.

Notes
