Method
Prepare the filling
- In a mixing bowl, combine the crumbled bacon, chopped jalapeños, cream cheese, shredded cheddar cheese, garlic powder, and onion powder. Mix until well combined.
- Lay an eggroll wrapper on a clean surface with a corner facing you. Place about 2 tablespoons of the filling in the center of the wrapper.
Roll the eggrolls
- Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly to seal. Use a little water to seal the top edge.
- Repeat with the remaining wrappers and filling.
Fry the eggrolls
- Heat the vegetable oil in a deep fryer or large pot over medium heat until hot.
- Carefully add the eggrolls in batches, frying until golden brown and crispy, about 3-4 minutes per side.
- Remove the eggrolls and drain on paper towels.
Serve
- Serve the bacon jalapeño eggrolls warm with your favorite dipping sauce.
