Prepare the Dough
- Preheat the oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.
- On a floured surface, roll out the pizza dough to your desired thickness.
Assemble the Pizza
- Transfer the rolled-out dough to a pizza peel or baking sheet.
- Spread the pizza sauce evenly over the dough.
- Sprinkle the mozzarella cheese over the sauce.
- Distribute the crumbled bacon and sliced figs evenly on top.
- Add crumbled gorgonzola cheese and drizzle with olive oil.
- Sprinkle with chopped rosemary if using.
Bake the Pizza
- Carefully slide the pizza onto the hot pizza stone or place the baking sheet in the oven.
- Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
- Remove from the oven and let cool for a few minutes before slicing.
