Salad Base
  • 4 cups arugula washed and dried
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
Dressing
  • 3 tablespoons olive oil extra virgin
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey optional
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground
Toppings
  • 1/4 cup parmesan cheese shaved
  • 1/4 cup walnuts toasted and chopped

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the arugula, cherry tomatoes, and red onion.
  2. In a separate small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to coat.
  4. Top the salad with shaved parmesan and toasted walnuts before serving.
