Method
Prepare the Oven and Pan
- Preheat the oven to 350°F (175°C). Grease a loaf pan with cooking spray or butter.
- In a small bowl, mix together the granulated sugar and cinnamon for the topping. Set aside.
Mix Dry Ingredients
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
Combine Wet Ingredients
- In another bowl, whisk together the apple cider, vegetable oil, eggs, and vanilla extract until smooth.
Combine Mixtures
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Bake the Bread
- Pour the batter into the prepared loaf pan. Sprinkle the cinnamon-sugar topping evenly over the top.
- Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve warm or at room temperature.
